It is our first organic extra virgin to be extracted at the beginning of the olive growing season from 100% Maurino cultivar olives. It is recommended to use it raw on white fish and prawns, sweet vegetables, legume or shellfish soups, mushrooms, cow cheeses and in general on all the most delicate dishes.

Bruschette, omelettes, fried red meat, shellfish appetizers, tuna, chickpea or bean salads, marinated red meat or swordfish, blue fish, vegetables au gratin, grilled porcini mushrooms, soups and risottos with mushrooms, shellfish in sauce, roast rabbit, grilled chicken, goat cheese, burrata, one teaspoon in baby food (recommended).

Organoleptic profile

To the nose

Medium/intense green fruitiness with prevailing hints of leaf and tomato leaf.

To the taste

Medium bitterness with sweet sensations of grass that evolve into sharper notes of leaf and rocket, very long; medium pungency in intensity and persistence.
